Blueberry Muffins

Soft, fluffy blueberry muffins with a tender crumb and bursts of fresh blueberries in every bite.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen blueberries

Instructions

  1. Preheat the oven to 375°F and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix the melted butter, eggs, milk, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the blueberries carefully, being careful not to overmix the batter.
  6. Divide the batter evenly into the prepared muffin tin.
  7. Bake for 18–22 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
Tip: Toss the blueberries in a little flour before folding them into the batter to help keep them from sinking.
